One day ahead, rinse the cod thoroughly and place it on a strainer over a bowl with cold water, without touching the bottom
Leave it in the refrigerator and change the water at least four times
When preparing, drain well, cover with boiling water, and let it rest for 20 minutes
Remove the skin and bones and shred into flakes
