About 1 hour before serving time, cook the rice in boiling salted water for approximately 13 minutes
Drain the rice and let it stand until still slightly firm
Mix together the three types of cheese, cut into small cubes
Grease a refractory dish that can be taken to the table
Place half of the rice at the bottom
Cover with the cheeses
Top with some small pieces of butter
Cover with the remaining rice
Melt the butter and mix it with Parmesan cheese and sprinkle on top
Bake in a hot oven for about 35 minutes or until the top is golden brown
