Cook the potatoes with skins until they are mashed but still firm
Let them cool down
Place them in the freezer for 10 minutes and then grate them coarsely
Season with salt and black pepper and reserve
Stuffing:
Saute the chicken with oil, onion, and tomato
Finely chop the meat and mix it with cheese to form a paste
Grease a small frying pan and cover the bottom with grated potato
Place 2 tablespoons of the mixture in the center and cover with the remaining potato
Use a spoon to press and shape the food into a rounded shape, covered by another frying pan, like a tostex
Cook for 10 minutes on each side.
