Melt the butter and lard in a large skillet
Add the sweet potatoes, mashing them with a spatula to form a smooth mass
Season with salt and black pepper
Cover
Cook over medium heat for 8 minutes
Remove the cover and continue cooking for an additional 5 minutes, or until a golden-brown crust forms on the bottom
Flip the potato omelette cake onto a serving plate, so that the crispy side is facing up
