Peel the manioc
Wash in running water and grate afterwards
Place over a fine cloth and squeeze well, letting the liquid rest for 15 minutes or until the gum deposits at the bottom
Heat the oven to high temperature and grease the mold with butter
Drain the liquid, leaving only the gum at the bottom of the vessel
Mix the grated manioc with the gum
Add half a cup of coconut milk and water
Add the grated acacia, salt, butter, and eggs
Mix well
Put the mixture in the mold and bake for 30 minutes
Douse the cake with a quarter cup of coconut milk and bake for another 30 minutes
Increase the oven temperature
Douse with the remaining coconut milk and bake for 30 minutes or until lightly golden
Let it cool, unmold, and serve.
