In a large pot, place the chicken, water, and salt
Bring to a boil
Remove any foam that forms on the surface of the water
Add the celery, onion, carrot, tomato, cover, and cook until the chicken is tender
Strain the broth through a fine-mesh sieve
Portion into appropriate containers and refrigerate or freeze for up to 3 months
