1 beef roll of approximately 4.2 pounds

1 medium onion sliced into thin strips
2 cloves of garlic minced
1 green bell pepper sliced into thin strips
2 tablespoons of chopped fresh parsley
100g of defatted bacon cut into slices
3 small carrots whole
2 tablespoons of olive oil
3 cherry tomatoes halved

Clean the beef well and open it up, cutting as shown in the diagram
Pound the beef well
Season with salt, black pepper, and reserve
In a bowl, mix together the onion, garlic, bell pepper, and parsley
Spread this mixture over the beef, reserving some for the sauce
Arrange the bacon slices on top of the beef and place the carrots in the center, running lengthwise
Roll up and tie tightly
Heat the olive oil in a pressure cooker and brown the beef on both sides
Add the remaining filling, tomatoes, and carrot pieces (if any)
Simmer with the lid off for 5 minutes
Join water, cover, and cook for 25 minutes from the start of boiling or until the beef is tender
Cut the beef into slices in a baking dish and spoon the sauce over the top
Serves 6 to 8 people.
