Heat the olive oil and annatto oil in a pan and sauté the onion, garlic, cilantro, and tomatoes, stirring occasionally

Add the fresh crab meat and stir for a few minutes more

Season with salt and black pepper to taste

Place the mixture into the fritter shells

Beat the eggs until they froth and spoon them over the crab mixture

Sprinkle with grated Parmesan cheese and bake in a preheated oven for 5-7 minutes, or until golden brown
