Wash and cut the peaches, passion fruit, and pineapple into slices, keeping the skin intact
Bring the sugar and 1/2 cup of water to a boil
Let it simmer until a syrup forms
Add the fruits, cinnamon sticks, Indian coriander leaves, and star anise, and cook for five minutes
Add the remaining water and let it simmer for ten minutes over low heat
Serve hot
Garnish with a whole anise and a thin slice of orange
Serve with a chocolate cookie alongside each serving.
