2 packets of active dry yeast for bread (30g)
1 tablespoon of salt
1 cup of milk
2 cups of water
1 tablespoon of panettone extract
3 eggs
6 tablespoons of butter
1 cup of all-purpose flour
1,1 kg of wheat flour
1 cup of dark chocolate cut into small pieces

1 cup of all-purpose flour
1,1 kg of wheat flour
1 cup of dark chocolate cut into small pieces
Beat in a blender, at the pulse speed, the yeast and salt
Add the milk, water, and panettone extract and beat again at the pulse speed
Add the eggs and beat for a few seconds
Transfer this liquid to a stand mixer and add the butter
Turn on the stand mixer
at low speed and gradually add the all-purpose flour, little by little
Beat until smooth and stop the motor
Join 1 kg of wheat flour, little by little, and mix until a sticky dough forms
Dust a clean surface with the remaining flour and place the dough
Start working the dough with your hands until it starts to come away from the surface and your hands
Divide the dough into four parts and put 1/4 cup of chocolate in each one
Work the dough a bit more to incorporate the chocolate well and shape each mass into a panettone mold for 500g
Bake in a medium-temperature oven until golden brown.
