Rinse 1/2 cup of small fresh mushrooms well under cold running water, then soak them in 4 cups of water mixed with 2 tablespoons of salt for at least 30 minutes. Drain and set aside the following ingredients:
1 small onion finely chopped
1 clove of garlic minced
1/2 cup of parsley finely chopped
1 bay leaf
1/2 teaspoon of black pepper
1/2 teaspoon of dried oregano
2 cups of white wine
2 cups of white wine vinegar
1/2 cup of olive oil
3 tablespoons of freshly squeezed lemon juice

Mix all these ingredients in a large saucepan and bring to a boil
Then add the mushrooms, bring to a boil again, reduce heat and simmer, covered, for about 10 minutes
Let it cool and refrigerate with the liquid
To serve, strain
Serve 4-6 portions.
