While preparing the cream, let the sliced bananas soak in the lemon juice mixed with 3 tablespoons of sugar
Beat the egg yolks until they become white and thick
Heat the mixture over a water bath, taking care not to let the bottom of the pan touch the water
Continue beating to thicken the cream
Add the sugar and wine and cook until the sauce starts to thicken, always whisking
Remove from heat immediately to prevent scorching
Add the bananas, serve chilled, and portion into 4-6 servings.
