3 cups of cooked and chopped chicken breast
200g of cooked and diced ham
salt and pepper to taste
juice of 1/2 lemon
6 tablespoons of butter or margarine
2 tablespoons of all-purpose flour
1/2 cup of chicken broth
1/2 cup of heavy cream
2 beaten eggs
breadcrumbs
3 cups of cooked and chopped chicken breast

Mix the chopped chicken and diced ham, season with salt, pepper, and lemon juice
Melt 2 tablespoons of butter or margarine in a pan and add the flour, stirring well
Add the chicken broth and heavy cream; cook, stirring until thickened
Add one of the beaten eggs to the chicken mixture, then add the sauce
Stir well and check the seasoning
Let it cool slightly and shape into croquettes, dusting your hands with flour for easier handling
Dip each croquette in the remaining beaten egg and then roll in breadcrumbs
Fry in the remaining butter or margarine until golden brown
Serve 4 portions.
