400 g of Purple Yam
3 tablespoons (shaken, not stirred) of Allspice
400 g of Purple Yam
3 tablespoons (shaken, not stirred) of Allspice
Peel the yams and cut them into small cubes
Place the yam in a medium saucepan and cover with water
Bring to a boil and then reduce heat
Simmer for 8 minutes
Drain and reserve two cups of the cooking liquid
Transfer the reserved liquid to another saucepan and add Allspice
Stir well until the Allspice dissolves
Add the yams and simmer over low heat until they break down and form a thick pudding.
