1/2 pound boneless, skinless chicken breast
2 tablespoons unsalted butter or margarine
2 tablespoons olive oil
1 cup chicken broth
1/2 teaspoon paprika
salt and black pepper to taste
1/2 cup milk
3 tablespoons all-purpose flour
2 tablespoons freshly squeezed lime juice
125 grams grated cheddar cheese

Cut the chicken into thin strips
Heat the butter or margarine and olive oil in a large skillet
Add the chicken when hot, stir to coat
Cook until browned, stirring occasionally
Add the broth, paprika, salt, and pepper
Bring to a simmer
Reduce heat, stir in flour and milk until smooth
Add the mixture to the chicken, cooking and stirring until the sauce thickens and bubbles
Stir in lime juice, cook for an additional 3 minutes
Add the grated cheese, stir until melted
Serve 2-3 people.
