1 1/2 kg chicken, cut into pieces

4 medium-sized cassava tubers, cooked and peeled, cut into small cubes

4 tomatoes without skin and seeds, chopped
1/2 cup of finely chopped onion
1 garlic clove mashed
1/2 cup of chicken broth
2 tablespoons of grated Parmesan cheese

Sprinkle the chicken pieces with salt and black pepper
Dredge in breadcrumbs
Beat the egg with water
Coat the chicken pieces in the egg mixture, then again in breadcrumbs
Place the chicken pieces in a skillet with oil and fry over low heat until tender
Increase the heat and brown
In a separate pan, sauté the cassava tubers in 2 tablespoons of oil with the tomatoes, onion, garlic, and chicken broth until tender
Combine the fried chicken and cooked cassava, and serve warm.
