Wash and clean the sweetleaf
Cut it in half lengthwise
Then cut into slices in another direction
For the batter: mix together flour, oil, seasoning, and water
Add the egg whites
Add more water if necessary to achieve a creamy consistency
Dip the sweetleaf pieces into this batter and fry in hot oil
Serve warm with lemon zest
