1 pineapple, peeled and cubed

In a saucepan, combine the pineapple and sugar
Simmer over low heat for 10 minutes or until the pineapple is cooked
Remove from heat and let cool
Add dissolved gelatin according to package instructions
Mix well with reserved pineapple
Beat the heavy cream until stiff peaks form, then add pineapple and mix gently
Pour into a 9x13 inch dish and refrigerate until firm
Serve chilled
