In a large saucepan, preferably made of copper or tin, combine all the ingredients, leaving only one tablespoon of sugar out
Let it simmer slowly until it reaches a boil
Light a match and pass it over the surface of the liquid to flambé it
Immediately sprinkle with the reserved sugar
After 15 seconds, cover the saucepan to extinguish the flame
Serve hot in small cups, adding some raisins and almonds to each cup.
