For the Gala Mole Cake
1 package of white gelatin, unsalted (12g)
1/4 cup of water (60ml)
1 cup of condensed milk (320g)
1 cup of heavy cream (240ml)
1 cup of coconut milk (240ml)
1/2 teaspoon of vanilla extract
For the Caramel
1 cup of sugar (180g)
For the Gala Mole Cake
1 package of white gelatin, unsalted (12g)
1/4 cup of water (60ml)
1 cup of condensed milk (320g)
1 cup of heavy cream (240ml)
1 cup of coconut milk (240ml)
1/2 teaspoon of vanilla extract
For the Caramel
1 cup of sugar (180g)
Prepare the caramel: place the sugar in a saucepan and bring to a boil until it caramelizes
Spread the caramel into a ring mold, 18cm in diameter
Add the mole mixture and refrigerate until firm
Unmold onto a plate and melt the remaining caramel over low heat
Serve with the Gala Mole Cake.
