Variety of mushrooms (such as shimeji, shiitake, Paris, portobelo, or any type you like), sliced
6 medium eggs

Heat a skillet with butter and sauté the mushrooms until they're tender
Add the beaten eggs and stir until set
Disconnect and season with salt, pepper, and scallion
Serve with bread or toast.
