As this preparation is quick, make it on the day
There's no need to freeze it
Mix together the egg yolks, mustard, lemon juice, salt, and white pepper
Add the olive oil first, a little at a time, whisking continuously until you achieve mayonnaise-like consistency
Add the remaining ingredients, reserving a little green onion for garnish
Refrigerate until serving time
Perfect for accompanying cruditΓ©s, as well as roasted meats, cold poultry, or smoked fish
Yields 3 cups or about 42 tablespoons.
