1/4 cup of Madeira wine
Salt and black pepper to taste

Melt the butter, combine with flour and cook until the mixture turns a caramel color
Remove from heat and add the broth gradually
Return the pan to the heat and continue stirring until it thickens and comes to a boil
Add the wine, season to taste, and mix well
Do not let it boil
