1 tablet of active dry yeast (15g)
1/4 cup of warm water
1 cup of lukewarm milk
2 cups of whole wheat flour (260g)
1/2 cup of dark brown sugar, packed into the cup (90g)
1/3 cup of flaxseed
2 tablespoons of salt
1 cup of all-purpose flour (120g)

Grease a bowl with butter and reserve
Dissolve the yeast in warm water
Combine the milk and dissolved yeast
Add the whole wheat flour, dark brown sugar, flaxseed, and salt
Mix well with a wooden spoon
Transfer the dough to a lightly floured surface and knead
A little at a time, add all-purpose flour until the dough absorbs it without becoming tough
Form into a ball and place in the greased bowl reserved earlier
Cover with a damp cloth and let rise for 2-3 hours or until doubled in volume
Grease two baking sheets with butter and reserve
Let the dough relax and divide it in half
Shape each half into a round loaf and place on the prepared baking sheets
Let rise again for another 1 hour and 30 minutes, in a protected area
Heat the oven to 350°F (moderate)
Bake the loaves for 40 minutes or until golden brown
If it starts to brown too quickly, cover with aluminum foil
Check by gently tapping on the loaf; if it sounds hollow, it's done
Remove from the oven and let cool before cutting
