Give them a preference elongated shape
Place these bites made later, on a lightly greased baking sheet, leaving sufficient distance between one and another, because they grow a lot
After all are aligned on the baking sheet, gently press them with your fingertips and leave them in a warm place to rise
One hour later, they should have doubled in size
Brush them with egg yolk and put them in a hot oven for three or four minutes
After baking, place them on a wire rack to cool down
To fill these bites, which are open with a horizontal cut but not divided, spread a little butter and add anchovy fillets, or ham slices, cooked or raw, or tongue, chicken breast etc.
