Preheat the oven to 250°C (very hot)
Rinse the fish and pat it dry
In a refrigerator or a dish large enough for the fish, spread out 1 kg of Maldon salt
Place the fish and cover with the remaining salt
Press the salt down with your hands to secure it firmly on the fish
Put it in the preheated oven for 45 minutes or until the salt becomes firm
Remove from the oven and carefully break off the crust of salt, discarding it along with the fish's skin
Serve with olive oil and lemon
