Preheat the oven to hot temperature (250°C)
Season the cod fillets with salt and black pepper
Brush with mustard and place two fillets side by side on a piece of aluminum foil
Place in a refractory dish
Cover and bake for 15 minutes
Meanwhile, mix the cheese with egg yolks and yogurt
Finally, add beaten egg whites
Open the aluminum foil package and spread the cheese cream over the fish fillets
Return to the oven (with the package open) and bake for another 10 minutes or until it puffs up and browns slightly
Serve in 4 portions.
