About 72 hours before serving, take the turkey out of the freezer and place it wrapped in a baking dish at the bottom shelf of the refrigerator
Then remove the wrapping, take out the giblets from inside the bird and reserve for the stuffing (see recipe below)
Tie the wings to the breast with toothpicks and cross the legs, securing them with dental floss
Cover with aluminum foil, place in a medium oven (400°F) preheated (the cooking time depends on the weight of the turkey)
Remove the foil, stuff the turkey with part of the stuffing and return to the oven, brushing with 3 tablespoons of butter every 40 minutes until the thermometer reads
Pass the remaining butter and honey and let it caramelize for a few more minutes
Take the turkey out of the oven, place it on a platter, remove the toothpicks, floss and serve with the rest of the stuffing, decorating the platter.
