2 cups of orange juice
1/4 cup of lemon juice
2 tablespoons of mustard
2 tablespoons of grated orange peel

Preheat the oven to moderate temperature (170°F)
Remove the ham skin, but not the fat
Make cuts in the fat, creating a design with lozenges or squares
Place the ham in the oven
Prepare the glaze
Heat the corn syrup, orange juice, lemon juice, mustard, and 1 tablespoon of grated orange peel over low heat
Allow it to boil, then cook for 8 minutes while stirring occasionally
Add the remaining grated orange peel
Brush this glaze over the ham after it has been in the oven for 30 minutes
Brush every 15 minutes and baste with the pan drippings
Cook for 45 minutes to 1 hour, or until golden brown
Serves 20 people.
