Zest the skin of one orange
Slice the other oranges into very thin rounds
Arrange the rounds in a removable mold, overlapping them slightly to cover the bottom and sides of the mold
Melt the butter or margarine
Add the flour and let it lightly brown
Add the milk and cook, stirring constantly
If it becomes too thick, blend it in a blender
Let the cream cool down a bit
Add the beaten eggs mixed with sugar and vanilla sugar
Mix well
Add the whipped egg whites and grated orange zest
Pour the mixture into the prepared mold
Bake in a water bath for about 1 1/2 hours or until, inserting a knife in the middle, it comes out clean
We recommend covering with aluminum foil for the last 20 minutes to prevent excessive browning.
