1 pie crust
1 egg lightly beaten
Filling:
1 1/2 cups of grated cheddar cheese (or prato) ralado
1 cup of milk
4 eggs
1/4 cup of butter or margarine
1/2 cup of chopped onion
1 handful of cooked spinach well chopped
2 tablespoons of chopped parsley
1 cup of sliced onion rings
2 tablespoons of butter or margarine
1 pie crust

1 1/2 cups of grated cheddar cheese (or prato) ralado

Prepare the crust: Line the bottom and sides of a 25 cm diameter round cake pan
Brush the egg over the pie crust and place it in the refrigerator
Heat the oven to moderate temperature (170°C)
Sauté the chopped onion in butter or margarine until golden, mix with spinach and parsley
Place in a large bowl
Gently beat the eggs and milk
Add to the spinach mixture and stir well
Sprinkle cheese over the crust
Pour the spinach mixture over the top
Bake in the oven at moderate temperature (170°C) for approximately 1 1/2 hours or until firm in the center and the crust is golden brown
While the quiche bakes, fry the sliced onion rings in two tablespoons of butter or margarine until golden
Arrange the onion rings on top of the baked quiche overlapping them slightly
Serves 6 people.
