In a saucepan, heat the milk over low heat
In another saucepan, melt the butter or margarine without browning
Add the wheat flour and continue stirring over medium heat for 2 minutes
Remove from heat
Gradually add the milk while whisking vigorously until the mixture is smooth
Place the saucepan over medium heat until it comes to a simmer, then reduce heat and let cook for 3-4 minutes or until slightly thickened
Add salt and black pepper to taste, then let cool
Gently beat the egg and add it to the mixture while whisking well
Combine 3/4 cup of the mixture with the cheese
Knead with a fork
Add more filling or cheese as needed until you achieve a thick consistency
Refrigerate until ready to use.
