1/4 cup of cold water
1 cup of chicken broth
2 cups of cooked and shredded chicken
1/2 cup of chopped salted pork cracklings
1/4 cup of chopped pickles
1/2 cup of salad seasoning (vinegar, oil, salt, and pepper)
hard-boiled egg wedges
lettuce
mayonnaise

Soak the gelatin in cold water and dissolve it over low heat
Add the chicken broth; let it chill until slightly thickened
Combine the chicken, pork cracklings, pickles, and salad seasoning
Season to taste
Place egg wedges at the bottom of a 1-liter mold and top with the chicken mixture
Chill until firm
Unmold and serve garnished with chopped lettuce
Cover with mayonnaise
Serve 4-6 portions.
