Pound the dust with a meat tenderizer until it's smooth
Then place it in a pot with enough water to cover it and cook for 30 minutes or until it's soft
Drain and cut it into small pieces
In a pan with oil, fry the onion until it starts to brown
Add the tomato, cover, and simmer for 10 minutes over low heat
Remove from heat and add the dust, potatoes, and thyme
Season with salt and pepper and arrange the salad in a bowl
Let it cool and serve with toasted pork strips on the side
