400 g of gorgonzola cheese
20 tomatoes
3/4 cup of chopped fresh parsley
1/2 cup of chopped green onion
6 tablespoons of fresh mint or 6 tablespoons of dried mint
6 tablespoons of lemon juice
6 tablespoons of mustard paste
1 cup of olive oil or to taste
salt and black pepper to taste

Chill the gorgonzola cheese until firm enough to grate
Slice the tomatoes into rounds and arrange them slightly overlapping in a circular pattern on a platter
Grate the gorgonzola cheese, then combine it with parsley, green onion, and mint
Sprinkle over the tomatoes
In a small bowl, whisk together lemon juice, mustard, and olive oil, adding the latter gradually while whisking well
Season to taste with salt
Pour the dressing over the tomatoes, and if desired, sprinkle with black pepper
