2 tablespoons of freshly squeezed lime juice

In a saucepan, combine the gelatin, half cup of sugar, and one cup of boiling water
Bring to a low heat, stirring until the gelatin and sugar dissolve
Add the remaining boiling water and sugar, and mix well
Remove from heat
Add the mashed banana, lime zest, and lime juice
Let it cool
Place in the freezer for a few minutes, remove, and stir with a spoon
Return to the freezer
Repeat the process 2 or 3 times, until the sorbet is firm
Serve in bowls
