1/4 cup of butter
120g mushrooms sliced into strips
2 tablespoons finely chopped onion
1/2 tablespoon chopped green shallot
1/2 teaspoon chopped fresh parsley
1 tablespoon Worcestershire sauce
salt and pepper to taste
2 steaks mignon
1/4 cup of cognac
2 tablespoons dry sherry or madeira wine
1/4 cup of butter

Melt the butter in a hot skillet
Add the mushrooms and onion
Cook for 5 minutes
Add the green shallot, parsley, Worcestershire sauce, salt, and pepper
Cook for an additional 5 minutes
Add the steaks and cook to desired doneness
Pour the cognac into a flameproof bowl
Light it on fire and pour it over the steaks
When the flames die down, add the dry sherry or madeira wine
Serve hot, garnished with parsley.
