1/3 cup of olive oil
1 tablespoon of fresh mint leaves, chopped
1 tablespoon of fresh parsley leaves, chopped
1 tablespoon of green onion, chopped
3 tablespoons of red wine vinegar
salt and black pepper to taste

Place the olive oil in a small bowl
Add the mint, parsley, and green onion
Let it rest at room temperature for 1 hour
Add the red wine vinegar and season to taste with salt and black pepper
Use for tomato salad or green salad
