Soak the gelatin in cold water for 5 minutes
Beat the egg yolks until light and fluffy; gradually add 1/2 cup of sugar, beating continuously; then add the coffee and salt
Simmer over low heat, stirring constantly, for 5 minutes
Melt the gelatin mixture; let it cool to the point where the mixture starts to thicken
Beat the egg whites until stiff peaks form; gradually add the remaining sugar and vanilla extract, beating continuously; then add the melted gelatin mixture
Pour into a cake pan lined with the basic cake recipe and refrigerate until firm
Cover with whipped cream topping.
