In a saucepan, mix the gelatin, sugar, salt, and water with the chocolate
Cook over medium heat, stirring constantly, until the chocolate melts
Remove from heat
Beat the egg whites lightly, then gradually add the chocolate mixture, beating well
Place everything back in the saucepan
Cook over medium heat, stirring constantly, just until it reaches a simmer
Remove from heat
Place the saucepan in an ice bath or let cool to room temperature
Stir occasionally until thickened
Add vanilla extract
Beat egg whites until stiff peaks form, then gradually add 1/2 cup of sugar, beating well until firm
Add heavy cream and beat until stiff peaks form
Finally, combine with the chocolate mixture and refrigerate until set.
