In a pot, combine the dates, water, and sugar
Bring to a boil, then let it simmer until the dates are soft and the liquid has thickened
Let it cool and divide into two parts
Set aside one part and in the other, add the heavy cream
In a rectangular form lined with plastic wrap, place half of the softened sorbet, the date mixture with heavy cream, and top with the remaining sorbet
Place in the freezer until set
When serving, unmold and top with the date syrup.
