Preheat the oven to 150°C low heat
Grease a baking dish of 21 cm x 31 cm with butter and line with parchment paper. Reserve
Prepare the dough: in a bowl, mix the egg yolks with eggs, sugar, and butter
Pour the dough into the prepared baking dish and bake for 15 minutes, or until, when you insert a toothpick into the center of the cake, it comes out clean
Remove from oven and let cool
Unmold onto a parchment paper dusted with sugar
Roll up like a roulade and place in a refrigerator-proof mold. Reserve
Prepare the topping: beat egg whites until stiff and gradually add sugar, beating until stiff peaks form
Cover the roulade with this mixture and bake in hot oven (200°C) until lightly golden
