6 medium-sized zucchinis (1.2 kg)
1 cup chopped onion
2/3 cup diced tomatoes, skin and seeds removed
1 tablespoon olive oil
3 tablespoons chopped fresh parsley
2 eggs
1 1/4 cups all-purpose flour
3 cups breadcrumbs (for frying)
6 medium-sized zucchinis (1.2 kg)

Remove the ends of the zucchinis, wash, dry, and cut into three equal pieces
Using a vegetable corer, carefully remove the pulp
In a saucepan mix together the onion, tomatoes, and olive oil
Add the parsley and cook until the onion is translucent and the mixture is uniform
Remove from heat and let cool
Mix in the eggs and flour
The mixture should form a homogeneous but not too stiff dough
Fill the zucchinis with this mixture and coat with all-purpose flour
Fry in hot oil for 5 minutes, using a basket fryer
Remove from heat and place on paper towels to drain
Serve warm
