The day before preparation, let the cornmeal soak in a bowl with water
Batter in a blender
Transfer to a bowl and let it rest for a night
The next morning, pass through a fine mesh or cheesecloth

Bring to a boil over medium heat, stirring constantly until thickened
If too thick, add a little more water and stir until desired consistency is reached
Remove from heat, let cool, and portion into small servings.
