Heat a pan with butter, onion, bell pepper, and celery
Refine for five minutes, stirring occasionally
Add lentils and four cups of chicken broth
Bring to a boil, then reduce heat and simmer for 30 minutes or until the lentils are tender
Add rice, sliced sausage, and diced carrots
Increase heat and bring to a boil
Then, reduce heat again and cook until the rice is tender
In a separate pan, heat olive oil
Add green peas and refine, stirring occasionally, for five minutes or until slightly cooked and crunchy
Place the lentil and rice mixture in a baking dish and arrange the green peas around it
Sprinkle with chopped nuts.
