Soak the cod in cold water in the refrigerator for 48 hours
Change the water at least eight times during this period
Drain, remove the skin and bones, and flake it with your hands
Set aside
Heat olive oil, onion, and garlic in a pan over low heat until the onion is soft
Add the cod and stir for two minutes
Beat the eggs lightly and season with thyme
Pour into the pan and mix gently until all the mixture is creamy
Add sweet potato and olives, mix, and sprinkle with parsley
Serve immediately.
