2 bunches of spinach
1 1/2 tablespoons of olive oil
1 medium onion, finely chopped
3 green onions, well chopped
salt and black pepper to taste
4 tablespoons of all-purpose flour
1 1/2 cups of milk
1/2 cup of grated Parmesan cheese
100g of cooked ham, cut into strips (about 4 slices)

Wash the spinach
Rinse the leaves well and cook only with the water that remained after washing
Chop the spinach well and squeeze out a little liquid
In a large skillet, heat 1 tablespoon of olive oil over medium heat
Add the onion and green onions and fry for 5 minutes, stirring occasionally, until they are transparent
Add the spinach, salt, and black pepper to taste and stir quickly
Remove from heat
In a small bowl, mix together the all-purpose flour and remaining 1/2 tablespoon of olive oil until it forms a paste
Gradually add the milk, stirring well
Bring to a boil over medium heat, stirring constantly, until smooth
Add the Parmesan cheese and beat well
Add the ham, reserving some for garnish
Mix the creme with the spinach and place in a baking dish
Garnish with the remaining ham
Place in a hot oven (400°F), preheated, for about 25 minutes, or until lightly golden brown
Serve warm.
