Mix the sugar with the water and bring to a boil, without stirring
Let it simmer until a thin thread forms when tested by dipping a finger in the mixture
Open your fingers
The syrup should be easy to pour off
Let it cool slightly and add hot milk
Stir well
Return to the heat and let it simmer again
In a bowl, beat the eggs with the yolks, adding the grated cheese and mixing
Ladle the mixture into the hot syrup without stirring
Allow it to boil again, then reduce the heat until the syrup is transparent
Remove from the heat and pour into a 21 x 21 cm refractory dish
Bake in a preheated oven at 200°C until lightly browned
Do not stir
With a skimmer, remove the dessert and transfer it to a compote bowl
Pour the syrup through a fine-mesh sieve over the dessert
Let it cool and refrigerate
If desired, sprinkle with cinnamon
