1 can of 500g pineapple rings, well drained
160g of dark chocolate chips
1/4 cup of peppermint extract

In a small saucepan, mix the chocolate with the peppermint extract
Heat over low heat and melt
Gently grease a piece of parchment paper
Dip the pineapple rings into the melted chocolate mixture and ensure they are well coated on both sides
Place on parchment paper and let dry before serving
Cut into 4 portions.
