Core the apples and grate them finely, leaving out the seeds
Mix with sugar, cinnamon, and raisins
Place this mixture at the center of the rolled-out pastry dough, dusted with flour
Add rum over all the dough
Close it like a croissant, securing the seams with egg yolk
Bake in a 200°C oven
When cool, dust the strudel with confectioner's sugar
Serve with whipped cream.
